Oat and Buckwheat Muesli

Ingredients:

1 ½ cups rolled oats (not instant oatmeal)

½ cup puffed buckwheat

1 cup organic pears, diced

1 banana

1 cup red grapes, halved

½ cup dried apples, chopped

3 tbsp brown sugar

2 teaspoons ground cinnamon

Milk, almond milk, or rice milk to serve

Prep:

Preheat oven to 325°F. Spread oats evenly in a non-stick baking tray and bake in oven for about 10 minutes, stirring occasionally. Watch oats very closely while they bake as they can burn easily if overly cooked. Remove from oven and cool completely.  Pour oats into a large ceramic or glass bowl and add water (make sure all oats are covered in water). Let soak in the refrigerator overnight.  Add puffed buckwheat, dried apples, cinnamon, and brown sugar to soaked oats. Stir well. Divide mixture into serving bowls and top with pears, bananas, and grapes. Serve with your milk of choice. Enjoy!

Mexican Potato Omelet

Ingredients:

8 large eggs (cage-free are best)

1 red-skinned potato (cleaned, halved, sliced thin)

2 scallions (sliced thin)

3 garlic cloves (chopped)

2 medium-sized plum tomatoes (chopped)

½ cup shredded pepper jack cheese

2 Tablespoons olive oil

2 Tablespoons cilantro (chopped)

½ teaspoon fresh squeezed lime juice

Salt and freshly ground black pepper

Prep:

Preheat oven to broil on low to medium heat.

Beat all 8 eggs in large bowl until blended well. Add ¼ tomatoes and ¼ cheese and mix together.  Set aside momentarily while you follow the instructions below for potato mixture.

Heat 1 tablespoon of oil in 10-12 inch oven-safe skillet on medium heat on stove-top. Once heated, throw in potatoes, cover with lid, and cook until golden brown (8-12 minutes). Add garlic and almost all the scallions (leave a tiny amount for a garnish when omelet cooked). Sprinkle some salt and pepper in the skillet for flavor and stir ingredients together for about a minute.

Add the rest of the oil to the skillet and pour egg combo over the potato mixture in the skillet. Cook for 8-10 minutes, lifting up edges of the egg so egg cooks almost completely through. Then sprinkle the rest of the cheese on top of the egg combo and place in oven to broil for about to minutes, allowing all the ingredients to set and hold together well.

In that 2 minutes of egg combo setting in the oven, make a quick salsa to garnish the omelet with. In a small bowl, mix the rest of the tomatoes, scallions, cilantro, and lime juice and pour over omelet once omelet is done in oven and on the serving platter. Cut into pieces, serve, and enjoy!

Preheat grill to medium heat. Mix minced garlic and ¾ teaspoon of salt together in a bowl until you get a creamy paste-like consistency. Tomato and Corn Salsa

Ingredients:

2 teaspoons canola oil

1 pound fresh tomatoes (diced)

1 cup of corn kernels (fresh preferred)

½ cup shallots (diced)

1 Tablespoon fresh basil (chopped)

¼ teaspoon salt

Prep:

Heat oil in a medium-sized skillet over medium heat. Mix in corn and shallots, stirring every so often, for about 5 minutes, until lightly browned. Pour into a mixing bowl and allow to cool for a few minutes before stirring in tomatoes, basil, and salt. Serve immediately or refrigerate. Enjoy!
