Grilled Salmon

Ingredients:

1 whole wild salmon filet (about 1 ½ pounds; make sure all bones are removed)

½ cup fresh basil (thinly sliced)

2 medium-sized tomatoes (thinly sliced)

2 cloves garlic (minced)

1 Tablespoon extra virgin olive oil (EVOO)

1 teaspoon kosher salt

¼ teaspoon freshly grounded pepper

Prep:

Preheat grill to medium heat. Mix minced garlic and ¾ teaspoon of salt together in a bowl until you get a creamy paste-like consistency. Coat a large piece of aluminum foil with EVOO and lay the salmon filet (skin down) on the foil. Apply the garlic/salt paste all over the top of the salmon and follow with sprinkling 1/3 cup of basil on filet. Lay tomato slices over the salmon and sprinkle with the rest of the salt and ¼ teaspoon of pepper. Grill the salmon for 10-12 minutes, until fish is flakey and not red inside. It should be a beautiful pink color. When finished grilling, display salmon on a platter and garnish with the last of the sliced basil. Enjoy!

Benefits:

Salmon is high in omega-3 fatty acids which helps minimize fine lines and wrinkles, reduces redness and blotchiness, and restores the skin’s hydration if suffering from dry skin.  Omega-3 will also protect your skin against UV rays, but do not be mistaken by this finding. It is still important to use sunscreen so don’t replace eating salmon with covering your skin with SPF!

Tomatoes are high in antioxidants and nutrients and contain Vitamins A and C. Tomatoes are great to eat but are also used in many topical skin treatments and help combat acne and wrinkles quite effectively. It is proven that eating tomatoes on a regular basis will keep your teeth, skin, hair, and body strong and studies show it can also fight certain cancers as well. Eating tomatoes daily will protect the skin against erythema from UV rays.
