1 cup of corn kernels (fresh preferred)

½ cup shallots (diced)

1 Tablespoon fresh basil (chopped)

¼ teaspoon salt

Prep:

Heat oil in a medium-sized skillet over medium heat. Mix in corn and shallots, stirring every so often, for about 5 minutes, until lightly browned. Pour into a mixing bowl and allow to cool for a few minutes before stirring in tomatoes, basil, and salt. Serve immediately or refrigerate. Enjoy!

Serving size: 4 servings, about 2/3 cup each

Benefits:

Tomatoes are high in antioxidants and contain Vitamins A and C. Tomatoes are great to eat but are also used in many topical skin treatments and help combat acne and wrinkles quite effectively. It is proven that eating tomatoes on a regular basis will keep your teeth, skin, hair, and body strong and studies show it can also fight certain cancers as well. Eating tomatoes daily will protect the skin against erythema from UV rays.

Corn is also loaded with antioxidants, especially manganese and Vitamin C. These nutrients prevent stress and damage caused to the body’s cells. Vitamin C will also restore your skin’s texture and color (tone).
